You'll need
- 1 cup seedless dates, soaked in warm water for 10 minutes if dry, then drained
- 1 cup walnuts
- 2 tbsp desiccated coconut, plus extra for rolling
- A pinch of cardamom powder
Method
- Pulse the walnuts in a food processor until coarsely chopped.
- Add the dates, coconut and cardamom, and pulse until it comes together into a sticky, dough-like mass.
- Roll into small balls, then roll each one in extra desiccated coconut.
- Refrigerate for at least 30 minutes to firm up before eating.
