You'll need
- ½ cup broken wheat (dalia), rinsed
- 1 tbsp ghee
- 1 tsp cumin seeds
- 1 small carrot, 1 small potato, a handful of peas, diced small
- 2½ cups water, salt to taste
- Coriander to finish
Method
- Warm the ghee and let the cumin seeds crackle.
- Add the vegetables and sauté for 2–3 minutes.
- Add the dalia and toast for a minute, then pour in the water and salt.
- Simmer uncovered, stirring occasionally, for 15–18 minutes until soft and porridge-like.
- Finish with coriander and, if it has thickened too much, a splash of hot water.
Why this dish
Broken wheat cooked loose and soft is a dish Ayurveda treats much like khichdi: a grain that is already partly broken down asks less of digestion. The ghee and cumin keep it from sitting heavy, which is why it suits a slow morning.
