Vegetable uttapam

A thick, soft South Indian pancake from fermented rice-and-urad batter, topped with finely chopped vegetables before it cooks.

You'll need
- 2 cups idli/dosa batter (fermented rice and urad dal)
- 1/2 onion, finely chopped
- 1 small tomato, finely chopped
- 2 tbsp finely chopped coriander
- 1 green chilli, finely chopped
- Oil for the pan
Method
- Mix the chopped onion, tomato, coriander and chilli together in a small bowl.
- Heat a griddle, pour a thick ladle of batter and spread gently into a small circle, thicker than a regular dosa.
- Sprinkle the vegetable mix generously over the top while the batter is still wet.
- Drizzle oil around the edges, cover and cook until the base is golden, then flip briefly to finish.
Why this dish
Fermented rice-and-urad batter is a classical South Indian way of making grain easier to digest, and the thicker uttapam format turns the same batter into a heartier, vegetable-forward breakfast than a thin dosa.
