You'll need
- 1 cup sesame seeds (til)
- ¾ cup jaggery (gud), grated or chopped small
- 1 tbsp ghee
- A pinch of cardamom powder
Method
- Dry-roast the sesame seeds in a pan on low heat, stirring constantly, until they turn light golden and fragrant, about 4–5 minutes. Set aside to cool slightly.
- In the same pan, melt the ghee and jaggery together on low heat until it turns into a smooth, thick syrup. Do not let it harden.
- Turn off the heat, stir in the roasted sesame seeds and cardamom, mixing quickly and evenly.
- While still warm, grease your palms with a little ghee and shape into small balls before the mixture cools and sets.

Sesame and jaggery together are a traditional winter pairing in most of North India, eaten specifically in the colder months: the warming quality of both ingredients is the reason this combination, rather than any other sweet, is the one made every winter.
