You'll need

  • 1/2 cup jowar flour
  • 1/2 cup bajra flour
  • 1/4 cup besan (gram flour)
  • 1/4 cup whole-wheat flour
  • 1 onion, finely chopped
  • 2 tbsp chopped coriander
  • 1/2 tsp turmeric
  • 1 tsp red chilli powder
  • Salt to taste
  • Oil for cooking

Method

  1. Mix all the flours with the onion, coriander, turmeric, chilli powder and salt, and knead into a soft dough with a little warm water.
  2. Pat a ball of dough directly onto a hot greased griddle into a thin round, or pat it out on a wet cloth and transfer it.
  3. Poke a few holes in the centre with a finger to help it cook through, and drizzle a little oil around the edges.
  4. Cook on both sides until golden-brown spots appear, then serve hot with curd.

Why this dish

Mixing several whole grains together rather than using refined wheat alone is the classical reason this flatbread is denser and more slowly digested than a plain roti.
