You'll need
- 3 tbsp roasted gram (sattu) flour
- 1 cup cold water
- Juice of 1/2 lemon
- A pinch of roasted cumin powder
- A pinch of black salt
- Mint leaves, to finish
Method
- Whisk the sattu flour into the cold water until smooth, with no lumps.
- Stir in the lemon juice, cumin and black salt.
- Top with a few mint leaves and drink at once, before it settles.

Sattu is a cooling, filling food particularly suited to Pitta in the hottest months, and its slow-digesting protein is why it has a long history as a between-meals drink rather than a dessert-style one.
