You'll need

  • 1 cup fresh rose petals (unsprayed), washed
  • 1/2 cup sugar or jaggery
  • 2 cups water
  • Juice of 1 lemon
  • Ice, to serve

Method

  1. Simmer the rose petals with sugar and water for 10 minutes, until the petals pale and the syrup turns faintly pink.
  2. Cool completely, then strain, pressing the petals to get every bit of colour.
  3. Stir in the lemon juice.
  4. Pour over ice, topping up with chilled water, to serve.
