You'll need
- 1 cup roasted peanuts, skins removed
- 1 cup jaggery, grated
- 1 tsp ghee
Method
- Melt the jaggery with the ghee on low heat until it turns into a thick, bubbling syrup.
- Stir in the roasted peanuts quickly and evenly.
- Pour onto a greased plate or banana leaf, and flatten with a rolling pin while still warm.
- Cut or break into pieces once cooled and set.
Why this dish
Jaggery is a warming sweetener in Ayurveda, unlike refined sugar, and peanuts' grounding density makes this the kind of snack that suits a Vata afternoon better than something airy and cold.
