You'll need

  • 1 cup roasted peanuts
  • 2 dry red chillies
  • 1 small piece tamarind
  • A few curry leaves
  • 1 tsp oil
  • 1/2 tsp mustard seeds
  • Salt to taste

Method

  1. Grind the roasted peanuts, dry red chillies, tamarind and salt together with a little water into a coarse, thick chutney.
  2. Heat oil in a small pan, add mustard seeds and curry leaves, and let them sputter.
  3. Pour the tempering over the ground chutney and mix well.
  4. Serve alongside idli, dosa or uttapam.

Why this dish

Peanuts are a dense, warming food in Ayurvedic terms, which is why this chutney is traditionally kept as a side in small spoonfuls rather than a dish eaten on its own.
