Paneer stuffed paratha

A whole-wheat flatbread stuffed with a light, lightly spiced paneer filling, cooked with minimal oil.

You'll need

  • 1.5 cups whole-wheat flour, kneaded into a soft dough
  • 150g paneer, grated
  • 1/2 tsp cumin powder
  • 1/4 tsp garam masala
  • 2 tbsp chopped coriander
  • 1 green chilli, finely chopped
  • Salt to taste
  • Ghee for cooking

Method

  1. Mix the grated paneer with cumin powder, garam masala, coriander, chilli and salt.
  2. Divide the dough into balls, roll each one out, place a spoon of the paneer filling in the centre, and seal and roll again gently into a flat disc.
  3. Cook on a hot griddle with a little ghee on each side until golden-brown spots appear on both sides.
  4. Serve hot with curd or pickle.
