You'll need
- 200g paneer, crumbled
- 1 tbsp oil or ghee
- 1 tsp cumin seeds
- 1 onion, 1 tomato, 1 green chilli, finely chopped
- ¼ tsp turmeric, ¼ tsp garam masala
- Salt to taste, coriander to finish
Method
- Warm the oil, add the cumin seeds, then the onion and chilli, cooking until the onion softens.
- Add the tomato and turmeric, cook until the tomato breaks down.
- Add the crumbled paneer and garam masala, toss gently for 3–4 minutes: just enough to warm it through, not so long that it turns rubbery.
- Finish with coriander and salt.
Why this dish
Paneer made fresh at home and cooked briefly, rather than heavily fried, is considered an easy-to-digest way to get a dairy protein into a meal, which is why it's a common everyday breakfast rather than an occasional one.
