Oats vegetable upma

The semolina upma's lighter cousin, made with rolled oats and whatever vegetables are in the fridge.

You'll need

  • 1 cup rolled oats, lightly roasted dry for 2 minutes
  • 1 tbsp oil
  • 1 tsp mustard seeds, 1 tsp urad dal
  • 1 sprig curry leaves, 1 green chilli, chopped
  • 1 small onion, 1 small carrot, a handful of beans, finely chopped
  • 2 cups water, salt to taste
  • Juice of ½ lemon, coriander to finish

Method

  1. Dry-roast the oats in a pan for 2 minutes until they smell toasted, then set aside.
  2. In the same pan, temper the mustard seeds and urad dal in oil, then add curry leaves and chilli.
  3. Add the onion, carrot and beans, sauté 3–4 minutes until just softened.
  4. Pour in the water, bring to a boil, then stir in the roasted oats. Cook 3–4 minutes, stirring, until it thickens.
  5. Finish with lemon juice, salt and coriander.
