Steamed, not fried, a quick-ferment idli made with rolled oats instead of rice.

You'll need
- 1 cup rolled oats, ground coarse
- 1/2 cup curd
- 1/4 tsp mustard seeds
- 1/4 tsp urad dal
- A few curry leaves, chopped
- 1 carrot, grated
- Salt, to taste
- 1/2 tsp fruit salt (eno) or baking soda
Method
- Mix the ground oats with curd and let it rest 20 minutes.
- Temper the mustard seeds and urad dal in a little oil, and stir into the batter with the curry leaves, carrot and salt.
- Add the fruit salt just before steaming, and pour into greased idli moulds.
- Steam for 12 minutes, until a knife comes out clean.
Why this dish
Oats are a lighter grain than rice in Ayurvedic terms, slower to raise blood sugar and easier on a Kapha or Pitta digestion first thing in the morning.
