You'll need

  • 1 cup mixed sprouts (moong, chana, matki), lightly steamed
  • 1 small onion, finely chopped
  • 1 tomato, finely chopped
  • 1/2 cucumber, finely chopped
  • 1 tbsp lemon juice
  • 1/2 tsp roasted cumin powder
  • A pinch of chaat masala
  • 2 tbsp chopped coriander
  • Salt to taste

Method

  1. Steam the mixed sprouts lightly for 5 minutes, just until the raw edge is gone, and let them cool.
  2. Toss them with the onion, tomato and cucumber.
  3. Add lemon juice, roasted cumin powder, chaat masala, coriander and salt, and mix well.
  4. Serve chilled or at room temperature.

Why this dish

Lightly steaming rather than fully cooking the sprouts keeps most of their crunch and nutrition intact, which is the specific reason this salad is treated as a light snack rather than a cooked side dish.
