You'll need
- 1 cup whole wheat flour
- ½ cup besan (gram flour)
- 1 tbsp oil, plus ghee for cooking
- ½ tsp ajwain, ¼ tsp turmeric, a pinch of hing
- 1 small onion and 1 green chilli, finely chopped (optional)
- Water to knead, salt to taste
Method
- Mix the two flours with the ajwain, turmeric, hing, onion and chilli, and rub the oil through with your fingers.
- Add water gradually and knead into a firm dough. Rest it 15 minutes.
- Divide into balls and roll into medium-thick rounds.
- Cook on a hot tawa with a little ghee, until brown spots appear on both sides.
Why this dish
Besan has a lower glycaemic load than wheat alone, and ajwain and hing are the pair Ayurveda always reaches for alongside gram flour, since besan is heavier to digest without them.
