Lauki moong soup

लौकी मूंग सूप
Bottle gourd simmered soft with moong dal, about as gentle a dinner as the kitchen makes.

You'll need

  • 1 cup bottle gourd (lauki), peeled and diced
  • 1/4 cup split moong dal, washed
  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric
  • 1 tsp ghee or oil
  • Salt, to taste
  • 3 cups water

Method

  1. Cook the moong dal, bottle gourd and turmeric together in the water until both are soft, about 20 minutes.
  2. Lightly mash with the back of a spoon, keeping it soupy rather than thick.
  3. Warm the ghee, let the cumin crackle, and pour it over the soup.
  4. Season with salt and serve warm.
