Method

  1. Simmer the ginger in the water for five minutes.
  2. Turn the heat off and drop in the tulsi to steep for two minutes.
  3. Strain, let it cool until it is comfortably warm, then stir in the honey.
  4. Add honey to hot liquid and Ayurveda considers it spoiled — wait for it to cool.

Why this dish

Ginger is warming and pungent, the classical counterweight to Kapha's heaviness and damp. The honey rule is a real one in the classical texts, not a garnish of tradition — it goes in at the end.
