You'll need
- 1 cup toor dal, cooked soft
- 1 cup whole wheat flour
- 1/2 tsp turmeric, for the dough and the dal
- 1 tsp jaggery
- 1 tbsp tamarind pulp
- 1/2 tsp mustard seeds
- A sprig curry leaves
- 1 tsp oil
- Salt, to taste
Method
- Knead the wheat flour with a little turmeric, salt and water into a firm dough, and roll out thin, cutting into diamonds.
- Loosen the cooked dal with water to a thinner consistency, and bring to a simmer.
- Drop the dough diamonds into the simmering dal and cook 10 minutes, until soft.
- Stir in the jaggery and tamarind, temper with mustard seeds and curry leaves in oil, and simmer 5 more minutes.
Why this dish
Cooking the wheat dumplings directly in the dal makes this a warming, grounding one-pot dinner well suited to Vata, and the dal's bulk keeps Kapha satisfied without a separate rice or roti.
