You'll need
- 1 cup fresh curd, whisked smooth
- 1 cucumber, grated and lightly squeezed
- A small handful of mint leaves, chopped
- ½ tsp roasted cumin powder
- Salt to taste
Method
- Whisk the curd until there are no lumps.
- Fold in the cucumber and mint.
- Add the cumin powder and salt, and stir once.
- Rest it in the fridge for ten minutes before serving — not longer, curd is best fresh.
Why this dish
Pitta runs hot and sharp, and the classical answer is sweet, cooling and slightly heavy. Cucumber and mint are both cooling; the roasted cumin keeps the curd from feeling stagnant.
