You'll need
- 1 medium beetroot, boiled and grated
- 1 cup curd, whisked
- 1/4 tsp roasted cumin powder
- Salt to taste
- A few coriander leaves, chopped
Method
- Whisk the curd until smooth.
- Stir in the grated beetroot, roasted cumin powder and salt.
- Chill briefly if you like, garnish with coriander, and serve alongside a meal.
Why this dish
Curd-based raitas are a classical cooling side in Ayurveda, traditionally served alongside a spiced main dish to balance it out rather than eaten as a dish on its own.
