You'll need

  • 2 cups whole wheat flour
  • 2 tbsp oil, plus more for brushing
  • 3 potatoes, boiled and mashed
  • 1/2 cup green peas, boiled
  • 1 tsp cumin seeds
  • 1/2 tsp garam masala
  • 1/2 tsp amchur (dry mango powder)
  • Salt, to taste

Method

  1. Make a firm dough with the flour, 2 tbsp oil, salt and water, and rest 20 minutes.
  2. Mash the potatoes with peas, cumin, garam masala and amchur for the filling.
  3. Roll the dough into small circles, fill, and fold into the classic samosa shape, sealing the edges with a little water.
  4. Brush with oil and bake at 200°C for 25 to 30 minutes, turning once, until golden and crisp.
