आलू गोभी

You'll need
- 1 small cauliflower, cut into florets
- 2 medium potatoes, diced
- 2 tbsp oil
- 1 tsp cumin seeds
- ¼ tsp turmeric, 1 tsp coriander powder, ½ tsp red chilli powder
- 1 tsp ginger, grated
- Salt to taste, coriander to finish
Method
- Warm the oil, add the cumin seeds, then the ginger.
- Add the potatoes, turmeric and a splash of water, cover and cook on low heat for 8 minutes, stirring occasionally.
- Add the cauliflower, coriander powder and chilli powder, cover again and cook 10–12 minutes until both vegetables are tender but not mushy.
- Uncover and cook a final 2–3 minutes to dry off any extra moisture.
- Finish with salt and coriander.
Why this dish
Cooking this dry rather than in a gravy is the usual home method, and the long covered simmer on low heat is what keeps the cauliflower from turning watery or bitter.
